Easy Salmon and Broccoli

1 pounds salmon fillets, skinned and cut into 4 portions

1 head of broccoli, washed and cut into florets (about 2 cups)

3 tablespoons olive oil (divided)

1-2 cloves of garlic, minced

1/2 teaspoon of sea salt (divided)

1/2 teaspoon ground black pepper (divided)

1 lemon, sliced

 

Preheat oven to 450F and line a large baking sheet with parchment paper or foil. Arrange the salmon pieces on the lined baking sheet, leaving a few inches between the portions.  Drizzle 1 tablespoon of oil over the fish and top with garlic. Sprinkle with 1/4 teaspoon salt and 1/4 teaspoon pepper. Top with lemon slices.

Combine remaining oil, salt and pepper in a medium bowl and toss broccoli to evenly coat. Arrange the broccoli on the baking sheet around the salmon pieces.

Bake in the oven for 13-15 minutes. Makes 4 servings.
