Slow Cooker Sweet Potato Casserole

3-15 oz cans mashed sweet potatoes without added sugar
1 tablespoon orange juice
2 large eggs
1-2 teaspoons vanilla extract
1/2 cup skim milk
3/4 cup pecan, chopped
1/4 cup brown sugar lightly packed
1/4 cup white flour
1 teaspoon vanilla extract
1/4 cup butter melted

 

In a large bowl, lightly beat the eggs with a fork. Add mashed sweet potatoes, orange juice, vanilla, and milk–mix until completely smooth. Pour into the slow cooker and smooth out with a spatula.

In a small bowl, stir together the pecans, brown sugar, flour, vanilla extract and melted butter. Spread evenly on top of the sweet potatoes.

Cover the slow cooker and set on high for 3 to 4 hours. Makes 10 servings.
